My family loves salmon cakes (patties). This particular recipe came out of one of many cookbooks I own. I just love recipes!

Ingredients
- 1 large egg
- 1 teaspoon old bay seasoning
- 1/4 teaspoon black pepper
- 14 3/4 ounces can pink salmon, drained, skined & deboned, reserve juice
- 1/4 cup finely chopped onion
- 1/2 cup italian-seasoned breadcrumbs or flour (i like using flour better)
- 4-6 tablespoons oil for frying (your choice)
- TARTAR SAUCE (OPTIONAL)
- LEMON WEDGES (OPTIONAL)
How To Make salmon patties

Step 1Whisk together egg, Old Bay & pepper in medium-size bowl. Add salmon and juice, onion & breadcrumbs or flour, whichever you choose to use. Stir to mix well. Or just dig in with your hands.

Step 2Shape into 3" cakes.

Step 3Place a large cast-iron or heavy-bottomed skillet over medium-high heat until hot then add oil. Once oil is hot spoon mixture into hot oil & cook 4 minutes or so on each side or until golden brown. Drain on paper towels.

Step 4Pretty plated up on fresh spinach leaves with lemon wedges on the side and tartar sauce in a pretty, glass small bowl, all in the same plate.
