salmon & pasta primavera

I ate something similar to this at a little Italian restaurant, and I loved it so much I decided to try to duplicate it. Healthy and yummy!

Ingredients

  • 4 medium salmon, skinless filet
  • 1 medium yellow squash, sliced
  • 1 medium zucchini squash, sliced
  • 1 medium onion, chopped
  • 6 - mushrooms, sliced
  • 1/2 medium red bell pepper, sliced in about 2
  • 2 - carrots, sliced
  • 1 bunch fresh spinach
  • 3-5 cloves fresh garlic, either pressed or finely chopped (i use several large cloves because i make a large amount of this recipe and because i love garlic!)
  • 1/2-3/4 cup parmesan cheese
  • 1 1/2 cups heavy cream
  • - salt & pepper to taste
  • - angel hair pasta

How To Make salmon & pasta primavera

  • Step 1
    Slice all veggies and saute' in 2 T olive oil (or more if needed) till crisp/tender. Add salt and pepper to taste.
  • Step 2
    Mix cream and Parmesan cheese together, place in microwave safe bowl, and cook on high for about 1 minute.
  • Step 3
    Season salmon, if desired, and steam on medium (I use an iron grill), about 20 minutes or till cooked through.
  • Step 4
    Boil water and add angel hair pasta.
  • Step 5
    When veggies and pasta are done, toss together. Add cream/cheese sauce, and place salmon on top.
  • Step 6
    Top with more Parmesan and enjoy!
