salmon & pasta primavera

I ate something similar to this at a little Italian restaurant, and I loved it so much I decided to try to duplicate it. Healthy and yummy!

Ingredients
- 4 medium salmon, skinless filet
- 1 medium yellow squash, sliced
- 1 medium zucchini squash, sliced
- 1 medium onion, chopped
- 6 - mushrooms, sliced
- 1/2 medium red bell pepper, sliced in about 2
- 2 - carrots, sliced
- 1 bunch fresh spinach
- 3-5 cloves fresh garlic, either pressed or finely chopped (i use several large cloves because i make a large amount of this recipe and because i love garlic!)
- 1/2-3/4 cup parmesan cheese
- 1 1/2 cups heavy cream
- - salt & pepper to taste
- - angel hair pasta
How To Make salmon & pasta primavera

Step 1Slice all veggies and saute' in 2 T olive oil (or more if needed) till crisp/tender. Add salt and pepper to taste.

Step 2Mix cream and Parmesan cheese together, place in microwave safe bowl, and cook on high for about 1 minute.

Step 3Season salmon, if desired, and steam on medium (I use an iron grill), about 20 minutes or till cooked through.

Step 4Boil water and add angel hair pasta.

Step 5When veggies and pasta are done, toss together. Add cream/cheese sauce, and place salmon on top.

Step 6Top with more Parmesan and enjoy!
