I ate something similar to this at a little Italian restaurant, and I loved it so much I decided to try to duplicate it. Healthy and yummy!

4 medium
salmon, skinless filet
1 medium
yellow squash, sliced
1 medium
zucchini squash, sliced
1 medium
onion, chopped
mushrooms, sliced
1/2 medium
red bell pepper, sliced in about 2
carrots, sliced
1 bunch
fresh spinach
3-5 clove
fresh garlic, either pressed or finely chopped (i use several large cloves because i make a large amount of this recipe and because i love garlic!)
1/2-3/4 c
parmesan cheese
1 1/2 c
heavy cream
salt & pepper to taste
angel hair pasta

How to Make Salmon & Pasta Primavera


  • 1Slice all veggies and saute' in 2 T olive oil (or more if needed) till crisp/tender. Add salt and pepper to taste.
  • 2Mix cream and Parmesan cheese together, place in microwave safe bowl, and cook on high for about 1 minute.
  • 3Season salmon, if desired, and steam on medium (I use an iron grill), about 20 minutes or till cooked through.
  • 4Boil water and add angel hair pasta.
  • 5When veggies and pasta are done, toss together. Add cream/cheese sauce, and place salmon on top.
  • 6Top with more Parmesan and enjoy!
