My maternal Grandfather, John Walker ( see picture) loved this dish. Along with creamed peas and carrots. Nothing fancy ...just gooood eating!! Simple and quick. Bless his heart, when he knew we would be visiting, down in southern Ill. He would remind me to bring a can of salmon..so's he could enjoy his favorite meal. Along with grandmas great baking powder biscuits! Memories: When I was a wee one..I remember Grandpa, gathering us kids around him, and taking out his one eye (a glass eye) and putting it in his mouth pretending to eat it like a jaw breaker!!

Ingredients
- 1 pound can (about 2 cups) salmon
- 1 tablespoon lemon juice
- 2 tablespoons butter
- 2 tablespoons flour
- 1-1/2 cup milk
- 1/2 teaspoon salt
- 2 - eggs, beaten
- 1 cup oats, old fashioned

Step 1Drain, bone, and flake the salmon and sprinkle with lemon juice, set aside. Melt butter in a saucepan. Add flour and stir until smooth. Add milk all at once, stirring constantly, until thickened. Season with salt. Combine sauce with salmon , beaten eggs, and rolled oats.

Step 2Bake in a 8-1/2 x 4-1/2 well greased loaf pan in a moderate 350 degree oven until done. About 30 minutes.
