Ingredients
- 6 ounces salmon filet
- 1 teaspoon butter
- - squeeze of lemon juice
- - few strands of lemon zest
- - salt and pepper
- sprig dill, fresh
- 1/2 medium shallot, thinly sliced
- - shot of champagne
How To Make salmon en papillote

Step 1Take a sheet of parchment paper, fold in half and cut it into a heart shape.

Step 2Butter the right side well, leaving about an inch around the outside edge un-buttered. On the buttered side place one salmon filet along with shallots, dill, lemon, lemon zest and pepper.

Step 3Fold the other side of the heart over the salmon. Twist the point of the paper to your left, and then work your way around the outside of the heart, twisting the paper over on itself as you go around, leave end open just a bit and pour Champagne in, then finish to seal.

Step 4When you have prepared as many Salmon en Papillote packages as you need, put them in a 350 degree oven for about 30 minutes. Place on dish, open by unfolding the sealed edge, this will then expose the salmon as well as your heart shaped parchment paper cut out!
