Great way to get your calcium and so much tastier than Tums! :) I love this with mashed potatoes and greens but look out! my southern is showing :)

Ingredients

  • 1 can red salmon, canned
  • 1 - yellow onion, chopped
  • 3-4 - pieces bread, crumbled
  • 1 teaspoon salt and pepper
  • 2 tablespoons minced garlic
  • 1/2 cup flour
  • 1 cup cornmeal

How To Make salmon croquettes

  • Step 1
    Drain the salmon, place in bowl and crumble the bones into the salmon. Leaving the bones in adds flavor! Leaving the bones in gives you calcium and treats osteoporosis!
  • Step 2
    Add all the other ingredients except flour and cornmeal In a separate bowl mix the flour and cornmeal together
  • Step 3
    Form patties or balls and roll them in the cornmeal mixture.
  • Step 4
    heat oil in cast iron skillet until smoke just starts to show. Note: Do not start frying until oil is hot or the patties will soak up the oil. Shallow fry the patties in hot oil until thoroughly browned.
