salmon croquettes
My favorite way to use leftover mashed potatoes. The potatoes really help bind everything together to form a firm patty that won't break apart in the pan.

Ingredients
- 2 tablespoons minced onion
- 1/4 cup finely chopped green pepper
- 1 cup mashed potatoes
- 1/2 cup cornmeal mix
- 1 package premium skinless & boneless pink salmon
- 1 - egg
- 1 tablespoon spicy brown mustard
- 1 tablespoon chopped parsley
- 1 tablespoon butter
- 1 tablespoon olive oil
How To Make salmon croquettes

Step 1Mix all ingredients together and form into patties. (Add a little additional cornmeal mix or flour if necessary for the best consistency.) Heat olive oil and butter in skillet over medium-high heat. Cook the croquettes until golden brown (2 to 3 minutes each side).
