Salmon Croquettes

My favorite way to use leftover mashed potatoes. The potatoes really help bind everything together to form a firm patty that won't break apart in the pan.

  • 2 Tbsp
    minced onion
  • 1/4 c
    finely chopped green pepper
  • 1 c
    mashed potatoes
  • 1/2 c
    cornmeal mix
  • 1 pkg
    premium skinless & boneless pink salmon
  • 1
  • 1 Tbsp
    spicy brown mustard
  • 1 Tbsp
    chopped parsley
  • 1 Tbsp
  • 1 Tbsp
    olive oil

How to Make Salmon Croquettes


  1. Mix all ingredients together and form into patties. (Add a little additional cornmeal mix or flour if necessary for the best consistency.) Heat olive oil and butter in skillet over medium-high heat. Cook the croquettes until golden brown (2 to 3 minutes each side).
