salmon & crab meat croquette
My family loves this recipe. I usually make this on Friday's after a long week from working. It is quick and easy dinner. I make it with some vegetables and that's it! My dear mother, who passed away, used to make this recipe but I revised it to a healthier version. Enjoy everyone!

Ingredients
- 1 can 14.75 oz salmon without bones and skin
- 4 ounces imitation crabmeat
- 2 large eggs
- 1 teaspoon lemon juice
- 1 teaspoon honey mustard
- 1/2 teaspoon worcestershire sauce
- 1/4 cup chopped green peppers
- 1/4 cup chopped red peppers
- 1/4 cup chopped onions
- 1/3 cup chopped scallions
- 1 cup italian bread crumbs and some for coating
- 1/2 cup corn meal
- 1/4 cup shredded sharp cheddar cheese
- dash salt and pepper
- dash old bay seasoning
- 1/2 cup olive oil
How To Make salmon & crab meat croquette

Step 1In large bowl mix the above ingredients together. Except the Olive Oil.

Step 2Form into balls and pat down. Makes about 7 croquettes. Coat with Italian Bread Crumbs.

Step 3Put Olive Oil in Non-stick Fry pan. Heat Olive Oil Medium to Low Heat then place the 7 croquettes in hot oil.

Step 4Cook approximately 2 to 3 minutes on each side until golden brown. Drain on Paper Towel.
