salmon & crab meat croquette

My family loves this recipe. I usually make this on Friday's after a long week from working. It is quick and easy dinner. I make it with some vegetables and that's it! My dear mother, who passed away, used to make this recipe but I revised it to a healthier version. Enjoy everyone!

Ingredients

  • 1 can 14.75 oz salmon without bones and skin
  • 4 ounces imitation crabmeat
  • 2 large eggs
  • 1 teaspoon lemon juice
  • 1 teaspoon honey mustard
  • 1/2 teaspoon worcestershire sauce
  • 1/4 cup chopped green peppers
  • 1/4 cup chopped red peppers
  • 1/4 cup chopped onions
  • 1/3 cup chopped scallions
  • 1 cup italian bread crumbs and some for coating
  • 1/2 cup corn meal
  • 1/4 cup shredded sharp cheddar cheese
  • dash salt and pepper
  • dash old bay seasoning
  • 1/2 cup olive oil

How To Make salmon & crab meat croquette

  • Step 1
    In large bowl mix the above ingredients together. Except the Olive Oil.
  • Step 2
    Form into balls and pat down. Makes about 7 croquettes. Coat with Italian Bread Crumbs.
  • Step 3
    Put Olive Oil in Non-stick Fry pan. Heat Olive Oil Medium to Low Heat then place the 7 croquettes in hot oil.
  • Step 4
    Cook approximately 2 to 3 minutes on each side until golden brown. Drain on Paper Towel.
