My wife is allergic to seafood so I use Salmon in place of jumbo lump crab meat.

Ingredients

  • 4 lb
    salmon, canned
  • 1 medium
    red pepper finely diced
  • 1 medium
    yellow bell pepper finely diced
  • 1 medium
    green pepper finely diced
  • 1 large
    onion minced
  • 3 medium
    ribs celery minced
  • 4 medium
    eggs
  • 1/2 c
    mayonnaise
  • 2 Tbsp
    lime juice
  • 1/3 c
    butter melted
  • 1 Tbsp
    yellow mustard
  • 1 Tbsp
    worcestershire sauce
  • 2 Tbsp
    old bay seasoning
  • 2 c
    panko bread crumbs or enough to hold the cakes together

How to Make Salmon Cakes

Step-by-Step

  1. Mix all ingredients except the salmon and bread crumbs.
  2. Then fold in the salmon and bread crumbs.
  3. Form into patties and saute or bake until hot all the way through.
  4. We like to serve on a salad or brown rice.
