Rosemary Salmon-Veggie Patties
1 can(s)salmon, canned
1 mediumdiced red onion or sweet onion
1 cshredded zucchini
1/2 cbread crumbs or instant mashed potatoes
1-2 Tbspfresh rosemary, minced (or 1 tsp dried)
1 clovegarlic, minced
·salt & pepper to taste
1-2 Tbspoil or butter
How to Make Rosemary Salmon-Veggie Patties
- Combine all ingredients, except oil or butter, in large bowl and mix well. Add more bread crumbs or instant potatoes if the mixture feels too wet.
- Heat oil or butter on medium heat in large skillet or griddle. Scoop out about 1/4 cup of mixture and press onto skillet to form each patty.
- Working in batches, cook patties for about 5 minutes on each side until browned.
- Serve with tartar sauce, mayo, or spicy mustard.
