rosemary salmon-veggie patties

A good friend told me the secret to his salmon patties--fresh rosemary. I incorporated it into my own salmon patty recipe & the whole family loves it! This is practically the only way, my 8-yr old will happily eat fish.

Ingredients

  • 1 can salmon, canned
  • 1 medium diced red onion or sweet onion
  • 1 cup shredded zucchini
  • 1/2 cup bread crumbs or instant mashed potatoes
  • 2 - eggs
  • 1-2 tablespoon fresh rosemary, minced (or 1 tsp dried)
  • 1 clove garlic, minced
  • - salt & pepper to taste
  • 1-2 tablespoon oil or butter

How To Make rosemary salmon-veggie patties

  • Step 1
    Combine all ingredients, except oil or butter, in large bowl and mix well. Add more bread crumbs or instant potatoes if the mixture feels too wet.
  • Step 2
    Heat oil or butter on medium heat in large skillet or griddle. Scoop out about 1/4 cup of mixture and press onto skillet to form each patty.
  • Step 3
    Working in batches, cook patties for about 5 minutes on each side until browned.
  • Step 4
    Serve with tartar sauce, mayo, or spicy mustard.
