rosemary salmon-veggie patties
A good friend told me the secret to his salmon patties--fresh rosemary. I incorporated it into my own salmon patty recipe & the whole family loves it! This is practically the only way, my 8-yr old will happily eat fish.

Ingredients
- 1 can salmon, canned
- 1 medium diced red onion or sweet onion
- 1 cup shredded zucchini
- 1/2 cup bread crumbs or instant mashed potatoes
- 2 - eggs
- 1-2 tablespoon fresh rosemary, minced (or 1 tsp dried)
- 1 clove garlic, minced
- - salt & pepper to taste
- 1-2 tablespoon oil or butter
How To Make rosemary salmon-veggie patties

Step 1Combine all ingredients, except oil or butter, in large bowl and mix well. Add more bread crumbs or instant potatoes if the mixture feels too wet.

Step 2Heat oil or butter on medium heat in large skillet or griddle. Scoop out about 1/4 cup of mixture and press onto skillet to form each patty.

Step 3Working in batches, cook patties for about 5 minutes on each side until browned.

Step 4Serve with tartar sauce, mayo, or spicy mustard.
