Playing around with a bottle of pomegranate molasses and subbed it for fruit preserves in a recipe I've used for years. I think I like this better!

Ingredients

  • 1 pound salmon fillet (from the fat end)
  • 2 tablespoons pomegranate molasses
  • 2 teaspoons horseradish, not sauce
  • 2 teaspoons olive oil
  • 1 1/2 teaspoons brown sugar, packed

How To Make roasted salmon with pomegranate glaze

  • Step 1
    Preheat oven to 375 degrees F. Combine all of the sauce ingredients in a small bowl. Taste and adjust to your liking (some like it sweeter, some like it more "horseradishy").
  • Step 2
    Place salmon fillets on a parchment-lined baking sheet. Spread half the sauce over the fillets, covering completely. Save the rest for drizzling later.
  • Step 3
    Roast salmon for 12-15 minutes, depending on the thickness and how well done you like it. We like ours barely cooked.
  • Step 4
    Remove from oven and serve immediately. Drizzle with the remaining sauce, or serve sauce on the side.
