roasted salmon with pomegranate glaze
Playing around with a bottle of pomegranate molasses and subbed it for fruit preserves in a recipe I've used for years. I think I like this better!

Ingredients
- 1 pound salmon fillet (from the fat end)
- 2 tablespoons pomegranate molasses
- 2 teaspoons horseradish, not sauce
- 2 teaspoons olive oil
- 1 1/2 teaspoons brown sugar, packed
How To Make roasted salmon with pomegranate glaze

Step 1Preheat oven to 375 degrees F. Combine all of the sauce ingredients in a small bowl. Taste and adjust to your liking (some like it sweeter, some like it more "horseradishy").

Step 2Place salmon fillets on a parchment-lined baking sheet. Spread half the sauce over the fillets, covering completely. Save the rest for drizzling later.

Step 3Roast salmon for 12-15 minutes, depending on the thickness and how well done you like it. We like ours barely cooked.

Step 4Remove from oven and serve immediately. Drizzle with the remaining sauce, or serve sauce on the side.
