Rich & Creamy Tuna Casserole

We love this! I really love the creaminess and the fact that it's so easy to make, and tastes so rich. :)
In the picture, I used small shell pasta, and Ritz crackers (Roasted Vegetable flavor) to top the casserole.

1 lb
penne pasta, or pasta of choice
1 can(s)
solid white tuna in water, including liquid
1 can(s)
light tuna in oil, drained
2 can(s)
cream of mushroom soup
1/4 can(s)
evaporated milk, (use soup can)
2-3 Tbsp
sour cream
1 can(s)
mushroom slices, partially drained
stalks celery, chopped
small onion, chopped
1 Tbsp
parsley flakes
1 c
cheddar cheese, shredded
italian seasoned bread crumbs, or 1 sleeve of ritz crackers, crumbled


1Cook pasta according to package directions until al dente. Drain. Preheat oven to 350. Spray 9x13 pan with cooking spray.
2Saute onions & celery in a little butter until softened.
3In a large bowl, combine the tuna, and the remainder of ingredients, except bread crumbs/crackers.
4Combine pasta with tuna/soup mixture. Spoon into 9x13 pan and top with bread crumbs or Ritz crackers.
5Bake for about 30 mins, or until casserole is bubbly and golden browned. Enjoy.
6** If Freezing: Leave off the bread crumbs until ready to bake.
