Ingredients
- 2 pounds fresh or frozen red snapper fillets, skinned
- 1 small tomato, peeled, seeded and chopped
- 1/2 cup chopped onion
- 1/2 cup chopped green bell pepper
- 2 cloves garlic, minced
- 2 tablespoons fresh lemon juice
- 4 tablespoons butter
- 3 tablespoons chili sauce
- 1/4 teaspoon sea salt
- 1 teaspoon dried parsley
- 1/2 teaspoon dried thyme
- 3 dashes hot sauce
- 1 can (4 1/2 oz.) small shrimp, drained
- 1/4 cup white wine (opt.)

Step 1Thaw fish if frozen.

Step 2In a 13 x 9 x 2-in. glass baking dish, combine all ingredients except fish, shrimp and wine. Cover with wax paper or plastic wrap. (Make sure you vent the wrap.) Cook on HIGH in your microwave for 5 min. or untill vegetables are tender. Stir in shrimp and wine.

Step 3Place fish fillets on top. Spoon some of the sauce over fish. Cover and cook on HIGH about 10 min. or until fish flakes with a fork.

Step 4NOTE: This dish is great served with rice and BROCCOLI PARMESAN.
