2 lbred snapper fillets

1/2 tspsalt

1/2 tsppepper

3 Tbspbutter

1 mdonion, chopped

2green onions, chopped

2garlic cloves, minced

1 1/2 Tbspflour

1/2 cdry white wine
-
3tomatoes, peeled, seeded and chopped

1 tspparsley, chopped

1/2 tspbasil

1/2 tspthyme

1/4fine bread crumbs

3 Tbspfreshly grated parmesan cheese
How To Make red snapper in white wine sauce & tomatoes

1Preheat oven to 350F. Lightly butter a baking dish. Plece the fish filets in a single layer in the dish. Season with salt and pepper.

2Melt butter in a small saucepan. Add onions and garlic, and saute until limp - about 5 minutes. Stir in flour and cook for about 5 minutes, stirring constantly, until golden.

3Gradually add the wine, stirring until thickened. Add the tomatoes, herbs, salt and pepper. Pour sauce over fish fillets.

4Sprinkle bread crumbs over all, top with the Parmesan cheese. Bake uncovered for about 30 minutes or until the fish flakes easily with a knife.
