Ingredients

  • 1 teaspoon olive oil
  • 1 - onion, chopped
  • 1 - celery stalk, chopped
  • 2 - 6-1/2 cans chopped clams, undrained
  • 1 - 8 oz bottle clam juice
  • 1-3/4 cup chicken brotth
  • 1 large potato, diced
  • 1 teaspoon dried thyme
  • 1/4 teaspoon each salt and white pepper
  • 3 tablespoons cornstarch
  • 2 cups light cream

How To Make quick fishermans clam chowder

  • Step 1
    In lg pot over medium heat, saute onion and celery in oil for 5 mins. Add clams w/ their juices, broth, thyme, salt and pepper.
  • Step 2
    Cover, bring to a boil. Reduce heat, cover, cook until potatoes are tender, about 15 mins.
  • Step 3
    In bowl whisk together cornstarch and cream. Add mix to chowder, cook until thickened, stirring often.
