I was challenged whilst on vacation to cook up a main course at Marissa beach resort Sri Lanka for New Year's Eve dinner. The main had to be seafood, HOT adding spice for lovers.I took up the challenge and created a curry dish...This main was served to 150 guest's and was placed 1st...The dish was called "Prawn-Delicious from Gods Own"

Ingredients
- 1 kg large tiger prawns, shelled
- 1 medium brown spanish onion diced
- 3 medium ripe tomatoes diced
- 3 teaspoons fresh garlic and ginger paste
- 1 teaspoon turmeric powder
- 1 1/2 teaspoons red chili flakes
- 2 teaspoons lightly toasted & ground coriander seeds
- 1 cup lite coconut milk
- 1 teaspoon garam masala
- 1/2 cup low fat yoghurt
- 1 tablespoon lemon juice, fresh
- 1/2 teaspoon ground black pepper fresh
- 1 teaspoon lightly toasted & ground cumin seeds fresh
- 4 tablespoons olive oil
- 1 tablespoon coriander leaves chopped fresh
- 1 teaspoon table salt
- 1 - star anise,cinnamon stick,clove,black cardomom
How To Make "prawn-delicious from gods own"

Step 1Shell and Devein prawns then place prawns in large glass dish and sprinkle 1 tablespoon salt and cover with water for 3 minutes then rinse thoroughly.Pat dry prawns with a clean tea towel, next make a marinade using 1 table spoon ginger garlic paste,1 teaspoon salt, 1 teaspoon red chili flakes, 1 tsp turmeric powder, 1/2 cup low fat yogurt,1 tablespoon lemon juice. Mix prawns well in marinade and cover with cling wrap and allow to stand for 30 minutes. Heat oil - Add whole spices viz. star anise, cinnamon stick,clove, black cardamon and fry for 3 minutes.

Step 2Add Ginger & Garlic paste and saute for 2 minutes.

Step 3Add diced onion and saute until it becomes soft and opaque about 5 minutes.

Step 4Add chili flakes, Turmeric, Ground Coriander and saute for 5 minutes until you smell the aroma of the spices.

Step 5Add diced tomatoes and table salt and cook for another 5 minutes until tomatoes breaks down and dissolves and the olive oil rises to the surface.

Step 6Add prawns with the marinade and stir well and allow the curry to cook on medium heat until prawns changes color.

Step 7Add the light coconut milk and stir well simmer covered for 8 minutes.

Step 8sprinkle the ground Cumin powder,garam masala and black pepper over the curry and garnish with chopped coriander leaves.
