potato crusted tuna croquettes

These are amazing, I serve with my mozzarella cheese grits! southern love on a plate!

Ingredients

  • 1/2 cup chopped onion
  • 1/4 cup flour
  • 3/4 cup idaho instant potato flakes
  • 1/2 cup milk
  • 1 large egg
  • 2 cans 5 oz. tuna drained
  • - salt & pepper to taste
  • 1/4 teaspoon honey mustard or dijon mustard
  • 1/4 teaspoon garlic powder

How To Make potato crusted tuna croquettes

  • Step 1
    in a large bowl beat egg. Add tuna,flour, onion,salt pepper,garlic powder, mustard, milk and potato flakes, mix well should be moist.
  • Step 2
    in a small separate bowl add additional potato flakes to coat the patties. form patties with hands if they stick moisten with water. drench patties in potato flakes until covered
  • Step 3
    heat frying pan with oil on medium heat. place coated patties in frying pan cook until brown on one side then flip cook thoroughly on other side until golden brown.it only takes about 3-4 minutes on each side add oil as needed to coat pan and produce even frying.
  • Step 4
    we enjoy these with cheese grits and either a fresh salad or Cole slaw.
