I love a peppery breaded fish, so it may be necessary to slightly decrease the amount of pepper the recipe calls for.
I was kind of surprised that it browned so nicely!
Ingredients
-
2pieces tilapia (or other white fish)
-
1 Tbsplemon juice
-
1 cnon-buttered or salted popcorn, popped
-
1/4 tspsalt
-
1 tspground black pepper
-
dash(es)paprika
-
1/4 tspgarlic powder
-
1/4 tspitalian seasoning
How to Make Peppery "Popcorn" Fish
- Preheat oven to 350 degrees and lightly grease a baking dish.
Pour the lemon juice over the fish and set aside. - In a food processor (I used my magic bullet) pulse the popped popcorn until it resembles grated Parmesan cheese.
Add the salt, pepper, garlic, paprika and Italian seasonings and pulse a few more times to well mix.
Pour the popcorn mixture into a mixing bowl or ziplock bag. - Blot the fish just dry enough so it isn't dripping and toss/shake so it is well coated on all sides.
Place in prepared baking dish. Give a very quick spray of PAM over each and sprinkle a bit more of the popcorn mixture on top. - Bake for about 10-15 minutes, until fish is done. Should look lightly browned.
