I can't remember where I got this recipe; I wish I could take credit for it though! It is very easy and super delicious. It is one of my very favorite salmon recipes. I like to serve it with roasted asparagus...delish!

Ingredients

  • 2 - boneless, skinless salmon filets
  • 1/4 cup mayonnaise
  • 2 tablespoons grated parmesan cheese
  • 1 teaspoon dillweed
  • 1/8 teaspoon cayenne pepper
  • - lemon juice
  • 12 - crushed ritz crackers

How To Make parmesan crusted salmon

  • Step 1
    Pre-heat the oven to 375 degrees. Line a baking sheet with aluminum foil and place your salmon on the baking sheet. Drizzle with lemon juice.
  • Step 2
    In a small bowl, combine the mayonnaise, parmesan cheese, dillweed and cayenne pepper. Spread the mixture on top of the salmon filets.
  • Step 3
    Sprinkle the Ritz cracker crumbs on top of the mayonnaise mixture. Bake until fish is done (flakes easily with a fork), about 15 minutes.
