panko crusted cod with dilled aioli

An easy weeknight main that packs a flavor punch! Adding pickle relish to the aioli makes it more of a tartar sauce and is what the hubby prefers. But I like it without! The cod is crispy on the outside and flaky on the inside. Makes an easy company-worthy dinner as well.

Ingredients

  • AIOLI
  • 1/2 cup hellmans mayonnaise
  • 1 teaspoon fresh lemon juice
  • 1/2 teaspoon worcestershire sauce
  • 1 tablespoon fresh dill, chopped
  • 1/2 teaspoon white wine vinegar
  • 3/4 teaspoon dijon mustard
  • 2 tablespoons pickle relish, optional (your choice sweet or dill)
  • kosher salt & black pepper, to taste
  • COD:
  • 1 1/4 cups panko bread crumbs
  • 1/2 teaspoon sweet paprika
  • 1/4 teaspoon cayenne pepper
  • 2 teaspoons celery salt (or 1 teaspoon celery seed)
  • 1/4 teaspoon black pepper
  • kosher salt, to taste
  • 1 egg, beaten
  • 1/2 cup flour
  • 1 pound cod (4 portions)
  • 1/2 cup canola oil

How To Make panko crusted cod with dilled aioli

  • Step 1
    Make the aioli by mixing all ingredients in a small bowl, including the pickle relish (if using). Refrigerate if making ahead.
  • Step 2
    In a shallow dish large enough to hold a portion of cod, combine the panko, celery salt, paprika, cayenne. Add salt and pepper to taste. Set aside.
  • Step 3
    In another bowl, beat the egg. Set aside. In a third bowl, place the flour.
  • Step 4
    Dredge a piece of cod in the flour, shaking off the excess. Then dredge it in the beaten egg. Finally, coat the fish in the seasoned panko on both sides. Set aside on a plate. Repeat with the remaining portions.
  • Step 5
    Heat the oil over medium heat in a skillet large enough to hold all the pieces of cod. When the oil starts to shimmer, add the fish. Pan fry until golden brown on one side, then flip and cook on the other side till golden.
  • Step 6
    Serve immediately with a side of the aioli.
