Ingredients

  • BLACK BEAN BAKE INGREDIENTS

  • 2 can(s)
    black beans, drained and rinsed
  • 1/2 can(s)
    cola
  • 1/2
    medium sized yellow onion, diced
  • 1
    small green or red pepper, diced
  • 1/4 c
    honey
  • 1 Tbsp
    yellow mustard
  • 1 tsp
    chili powder
  • 1/8 tsp
    black pepper
  • 1/4 c
    ketchup
  • 4
    strips bacon
  • FISH INGREDIENTS

  • 1lb
    tilapia fillets
  • 1 1/2 c
    panko bread crumbs
  • 1 tsp
    salt
  • 1/8 tsp
    pepper
  • 2-3 Tbsp
    dijon mustard
  • 1/4 c
    oil

How to Make Pan fried tilapia with sweet and spicy black bean bake

Step-by-Step

  1. For the beans: combine all ingredients but bacon and place in greased casserole dish. Top with the strips of bacon and bake in 325 degree oven for about 50 min.
  2. For the fish: Combine panko,salt and pepper on a plate. Using a pastry brush thinly coat each fillet with the mustard, then dip in the crub mixture. Heat oil over med-high heat until hot. Pan fry
    fish in oil until golden brown on each side(about 3 minutes per side). Carefully remove to paper towels to drain. Serve with sweet and spicy black bean bake.
