Ingredients
- BLACK BEAN BAKE INGREDIENTS
- 2 cans black beans, drained and rinsed
- 1/2 can cola
- 1/2 - medium sized yellow onion, diced
- 1 - small green or red pepper, diced
- 1/4 cup honey
- 1 tablespoon yellow mustard
- 1 teaspoon chili powder
- 1/8 teaspoon black pepper
- 1/4 cup ketchup
- 4 - strips bacon
- FISH INGREDIENTS
- 1lb - tilapia fillets
- 1 1/2 cups panko bread crumbs
- 1 teaspoon salt
- 1/8 teaspoon pepper
- 2-3 tablespoons dijon mustard
- 1/4 cup oil
How To Make pan fried tilapia with sweet and spicy black bean bake

Step 1For the beans: combine all ingredients but bacon and place in greased casserole dish. Top with the strips of bacon and bake in 325 degree oven for about 50 min.

Step 2For the fish: Combine panko,salt and pepper on a plate. Using a pastry brush thinly coat each fillet with the mustard, then dip in the crub mixture. Heat oil over med-high heat until hot. Pan fry fish in oil until golden brown on each side(about 3 minutes per side). Carefully remove to paper towels to drain. Serve with sweet and spicy black bean bake.
