Ingredients

  • 6 tablespoons fat
  • 1/2 small onion, sliced
  • 1/4 pound mushrooms, freshly sliced
  • 4 tablespoons all purpose flour
  • 1 teaspoon salt
  • 1 teaspoon paprika
  • 1 dash cayenne pepper
  • 2 cups milk
  • 24 - oysters, raw with juice
  • 3 - eggs, hard boiled and sliced
  • 2 tablespoons cooking sherry

How To Make oyster casserole

  • Step 1
    Heat fat, add onions and mushrooms; cook until tender and remove from pan.
  • Step 2
    Blend flour with fat, add seasonings, let boil 2 minutes and add milk gradually.
  • Step 3
    Cook oysters in their own liquor until edges curl and add oysters and liquor to creamed mixture.
  • Step 4
    Add mushrooms, onion and eggs; stir in sherry.
  • Step 5
    Turn into greased casserole and bake at 400 for 15 minutes; serve on toast or pastry shells.
