  • 1/2 small
    onion, sliced
  • 1/4 lb
    mushrooms, freshly sliced
  • 4 Tbsp
    all purpose flour
  • 1 tsp
  • 1 tsp
  • 1 dash(es)
    cayenne pepper
  • 2 c
  • 24
    oysters, raw with juice
  • 3
    eggs, hard boiled and sliced
  • 2 Tbsp
    cooking sherry

How to Make Oyster Casserole


  1. Heat fat, add onions and mushrooms; cook until tender and remove from pan.
  2. Blend flour with fat, add seasonings, let boil 2 minutes and add milk gradually.
  3. Cook oysters in their own liquor until edges curl and add oysters and liquor to creamed mixture.
  4. Add mushrooms, onion and eggs; stir in sherry.
  5. Turn into greased casserole and bake at 400 for 15 minutes; serve on toast or pastry shells.
