This is an excellent recipe when you want something a little bit different. It goes great with wild rice and a green salad. Enjoy!

Ingredients

  • 2-3 pounds fresh salmon, filleted
  • MARINADE:
  • 1/3 cup fat-free italian dressing
  • 1/3 cup orange juice, unsweetened
  • SAUCE:
  • 2 tablespoons minced onion
  • 1 tablespoon yellow mustard
  • 1/2 teaspoon minced garlic
  • 1/2 teaspoon chili powder
  • 1 1/2 tablespoons olive oil
  • 1/2 cup fat-free italian dressing
  • 1 cup orange juice, unsweetened
  • - salt and pepper to taste

How To Make orange marinated salmon fillets

  • Step 1
    Combine the marinade ingredients in a shallow pan or zip-lock bag big enough to contain the amount of fish you are preparing. Place fish and coat well with marinade, allow to rest in the fridge for at least 1 hour.
  • Step 2
    In a small saucepan reduce 1 cup of orange juice over low-medium heat until it thickens and becomes syrupy. It will reduce to about 1/4 cup.
  • Step 3
    In the meantime, combine the remaining ingredients (except dressing) in a food processor and pulse until it becomes pasty.
  • Step 4
    Add the paste to the syrup and stir until hot. Let mixture cool for 2-3 minutes then return it to the food processor and blend.
  • Step 5
    Slowly drizzle in the Italian dressing until completely combined.
  • Step 6
    Spray a baking dish with Pam and place fillets skin-side down. Drizzle the sauce evenly over the until well coated. Bake uncovered for 15-20 minutes or until flaky.
  • Step 7
    Broil 2-3 minutes to caramelize the sauce if desired.
