This is an excellent recipe when you want something a little bit different. It goes great with wild rice and a green salad. Enjoy!

  • 2-3 lb
    fresh salmon, filleted

  • 1/3 c
    fat-free italian dressing
  • 1/3 c
    orange juice, unsweetened
  • SAUCE:

  • 2 Tbsp
    minced onion
  • 1 Tbsp
    yellow mustard
  • 1/2 tsp
    minced garlic
  • 1/2 tsp
    chili powder
  • 1 1/2 Tbsp
    olive oil
  • 1/2 c
    fat-free italian dressing
  • 1 c
    orange juice, unsweetened
  • ·
    salt and pepper to taste

How to Make Orange Marinated Salmon Fillets


  1. Combine the marinade ingredients in a shallow pan or zip-lock bag big enough to contain the amount of fish you are preparing. Place fish and coat well with marinade, allow to rest in the fridge for at least 1 hour.
  2. In a small saucepan reduce 1 cup of orange juice over low-medium heat until it thickens and becomes syrupy. It will reduce to about 1/4 cup.
  3. In the meantime, combine the remaining ingredients (except dressing) in a food processor and pulse until it becomes pasty.
  4. Add the paste to the syrup and stir until hot. Let mixture cool for 2-3 minutes then return it to the food processor and blend.
  5. Slowly drizzle in the Italian dressing until completely combined.
  6. Spray a baking dish with Pam and place fillets skin-side down. Drizzle the sauce evenly over the until well coated. Bake uncovered for 15-20 minutes or until flaky.
  7. Broil 2-3 minutes to caramelize the sauce if desired.
