Ingredients
- 2-3 pounds fresh salmon, filleted
- MARINADE:
- 1/3 cup fat-free italian dressing
- 1/3 cup orange juice, unsweetened
- SAUCE:
- 2 tablespoons minced onion
- 1 tablespoon yellow mustard
- 1/2 teaspoon minced garlic
- 1/2 teaspoon chili powder
- 1 1/2 tablespoons olive oil
- 1/2 cup fat-free italian dressing
- 1 cup orange juice, unsweetened
- - salt and pepper to taste
How To Make orange marinated salmon fillets

Step 1Combine the marinade ingredients in a shallow pan or zip-lock bag big enough to contain the amount of fish you are preparing. Place fish and coat well with marinade, allow to rest in the fridge for at least 1 hour.

Step 2In a small saucepan reduce 1 cup of orange juice over low-medium heat until it thickens and becomes syrupy. It will reduce to about 1/4 cup.

Step 3In the meantime, combine the remaining ingredients (except dressing) in a food processor and pulse until it becomes pasty.

Step 4Add the paste to the syrup and stir until hot. Let mixture cool for 2-3 minutes then return it to the food processor and blend.

Step 5Slowly drizzle in the Italian dressing until completely combined.

Step 6Spray a baking dish with Pam and place fillets skin-side down. Drizzle the sauce evenly over the until well coated. Bake uncovered for 15-20 minutes or until flaky.

Step 7Broil 2-3 minutes to caramelize the sauce if desired.
