ochro & rice salt-fish delight

Step 1In a sauce pan saute onions, garlic, ginger, peppers, lemongrass, carrots, pumpkin and ochros. Until slightly tender, add rice, water simmer for 5 mins with lid on.
-
Step 2Remove lid and add coconut milk, pepper flakes, water, oregano, rosemary and salt fish stirring ever so gently add salt and pepper to taste.I usually serve this with a simple green salad and hot sauce on the side.
