ochro & rice salt-fish delight

Strangely, this was my Dad's favorite thing to eat, growing up with stew Oxtail.It did not matter the amount, there was never enough to go around, especially when neighbors stopped by "to say Hi" more to eat some food! if you ask me.

Ingredients

  • 6 medium ochros sliced horizontally
  • 1 cup of parboiled brown rice
  • 1 small onion finely chopped
  • 3 cloves garlic finely chopped
  • 1 cup pumpkin, cubed
  • 1 cup carrots, cubed
  • 1/2 cup saltfish, shredded
  • 3 - pimentos peppers
  • 1/2 teaspoon fresh, oregano,
  • 1/2 teaspoon rosemary sprigs finely chopped
  • 1/2 teaspoon crushed, ginger
  • 1 cup water
  • 1 cup coconut milk
  • 1/2 teaspoon red pepper flakes
  • 1 pinch salt and pepper
  • 1 - sprig of lemon grass pounded and finely chopped

How To Make ochro & rice salt-fish delight

  • Step 1
    In a sauce pan saute onions, garlic, ginger, peppers,lemongrass,carrots, pumpkin and ochros. Until slightly tender, add rice, water simmer for 5 mins with lid on.
  • Step 2
    Remove lid and add coconut milk, pepper flakes, water, oregano, rosemary and salt fish stirring ever so gently add salt and pepper to taste.I usually serve this with a simple green salad and hot sauce on the side.
  • Step 3
    I know a lot are into healthy eating,but I find this dish is incomplete with (Golden Ray Cooking Butter). You may choose not to use it, but I have and it taste heavenly.With or without makes no difference to your taste buds I promise ♥
