2 onions, chopped
6 cloves garlic, minced
1/2 cup finely chopped celery
1 medium green bell pepper, cut into strips
3 t. oil
1 can stewed tomatoes, chopped, do not drain, 1 lb
1 can tomato sauce, 8 oz
1 t. sugar
1 t. sweet basil flakes
1 t. thyme flakes
1/4 t. each cayenne pepper, paprika and dry mustard
2 pounds cooked shrimp, shelled and deveined

1In large kettle, sauté together first 5 ingredients until vegetables are soft.
Add next 7 ingredients and simmer sauce for 15 minutes. Add shrimp and heat
through. Serve over a bed of Spiced Rice (recipe follows). Cornbread muffins are
a nice accompaniment. Serves 6

Spiced Rice:

1 1/2 cups long grain rice

3 cups chicken broth

2 T. oil

1/2 t. sweet basil flakes

1/2 t. thyme flakes

1/4 t. each cayenne pepper and paprika

Salt and pepper to taste

IN pan, stir together all ingredients. Cover pan and simmer rice for about 30
minutes or until rice is tender and liquid is absorbed. Serves 6

Note: If you are stout of heart and enjoy hot, fiery dishes, this is a nice one
to consider. This is very "hot: for me, although blazing palates will find this
mild. Increase amount of cayenne, if you enjoy bringing tears to your eyes.
