Ingredients
- 1 cup brown rice
- 2 teaspoons oil
- 1 - 16 oz. packages mixed vegetables, frozen (broccoli, carrots, snap peas & celery)
- 1/3 cup stir-fry sauce
- 2 teaspoons cornstarch
- 1 pound shrimp, peeled, deveined & tails off
- 1 - 8 oz. cans pineapple in juice
How To Make *** mom's shrimp stir fry ***

Step 1Cook rice as directed on package.

Step 2In skillet, heat oil, add vegetables, cook 3 - 4 minutes.

Step 3In liquid measuring cup, stir fry sauce & cornstarch; mix well.

Step 4In large bowl, add shrimp, pineapple & juice & pour stir fry/cornstarch mixture over; mix well. Pour into skillet with vegetables. Cook 4 - 5 minutes or until shrimp are opaque. Serve with rice on bottom of mixture.
