Ingredients
- 1/4 cup butter
- 3/4 cup olive oil, extra virgin
- 1/4 cup parsley
- 2 tablespoons lemon juice, fresh
- 2 cloves garlic, minced
- 1/2 teaspoon salt & pepper
- 1 1/2 pounds shrimp, peeled, deveined & tails off

Step 1Place butter in 10" square casserole. Melt butter in pan. Blend in olive oil, stir in parsley, lemon juice, garlic, salt & pepper. Add shrimp, stir to coat with butter mixture.

Step 2Cover - cook on medium high (microwave) 6 - 9 minutes, until shrimp are opaque (stir twice).

Step 3Let stand covered 2 - 3 minutes. Can serve plain or over rice. Serve with butter mixture as sauce.
