Ingredients

  • 1 - yellow onion, diced
  • 1 stick butter, divided
  • 3 tablespoons flour
  • 5 cups heated milk
  • 2 cups heavy cream
  • 3 ounces oysters, fresh, with liquid
  • 1 teaspoon kosher salt
  • 1 pinch pepper
  • 1 pinch cayenne pepper
  • 1/4 cup sherry

How To Make *** mom's oyster stew ***

  • Step 1
    Saute onion in 4 Tbsp butter. Sprinkle flour over onions, cook 2 minutes. Add heated milk, cream & oyster liquid, bring to simmer boil. Place in bowl, keep warm.
  • Step 2
    Saute oysters in remaining butter, salt, peppers, until edges begin to curl. Add oysters to milk mixture, add cayenne & sherry, cook 2 - 4 minutes.
