Ingredients
- FISH SALSA:
- 1 cup pineapple, chopped, drained
- 1 small red pepper, seeded & chopped
- 3 - scallions, chopped (both greens & whites)
- 2 tablespoons lime juice
- 1/2 teaspoon red pepper flakes
- FISH:
- 1/4 cup flour
- 1/2 cup cornmeal
- 1/4 cup mayonnaise
- 1 teaspoon old bay seasoning
- 4 - tilapia fillets
- 2 tablespoons olive oil, extra virgin
- 1 tablespoon butter

Step 1Make salsa; mix well. Refrigerate until needed.

Step 2In bowl, mix flour & cornmeal; mix well.

Step 3In seperate small bowl, whisk mayo & bay seasoning; mix well.

Step 4Dip fish in mayo mixture; then in flour mixture. Heat oil & pan fry fish; cook 3 - 5 minutes until golden, turn & cook 5 more minutes. Serve with fish salsa.
