  • FISH SALSA:
  • 1 cup pineapple, chopped, drained
  • 1 small red pepper, seeded & chopped
  • 3 - scallions, chopped (both greens & whites)
  • 2 tablespoons lime juice
  • 1/2 teaspoon red pepper flakes
  • FISH:
  • 1/4 cup flour
  • 1/2 cup cornmeal
  • 1/4 cup mayonnaise
  • 1 teaspoon old bay seasoning
  • 4 - tilapia fillets
  • 2 tablespoons olive oil, extra virgin
  • 1 tablespoon butter

How To Make *** mom's fried tilapia with fish salsa ***

  • Step 1
    Make salsa; mix well. Refrigerate until needed.
  • Step 2
    In bowl, mix flour & cornmeal; mix well.
  • Step 3
    In seperate small bowl, whisk mayo & bay seasoning; mix well.
  • Step 4
    Dip fish in mayo mixture; then in flour mixture. Heat oil & pan fry fish; cook 3 - 5 minutes until golden, turn & cook 5 more minutes. Serve with fish salsa.
