- 2 pounds shrimp, peeled, deveined & tails off
- 2 1/2 cups flour, divided
- 1 1/2 cups milk
- 1 1/2 teaspoons baking powder
- 1 teaspoon curry powder
- 1/2 teaspoon salt
- 2 cups shredded coconut
- - oil for fry

Step 1In bowl, 1 C flour. Set aside.

Step 2In another bowl, 1 C flour, milk, baking powder, curry & salt; mix well.

Step 3In another bowl, remaining 1/2 C flour & coconut; mix well.

Step 4Heat fry pan with oil. Dip shrimp in flour, then dip in batter, then roll in flour/coconut mixture. Fry until golden brown. Drain on paper towel. Serve with sweet & sour sauce, if desired.
