Ingredients
- 10 - eggs
- 1 cup milk
- 2 cups crushed saltine crackers
- 1 cup onion, diced
- 1 cup spring onions, chopped
- 2 cloves garlic, minced
- 1/2 cup monterey jack cheese, shredded
- 1/2 cup sharp cheddar cheese
- 1 cup red bell pepper, sliced
- 1 pound small shrimp, peeled, deveined & tails off
- 2 tablespoons butter, melted
- - salt & pepper, to taste
- - parsley, to taste

Step 1Preheat oven to 350 degrees F.

Step 2Whip milk & eggs, pour in bowl. Add crackers, onions, garlic, cheeses, bell pepper, shrimp, salt, pepper & parsley; mix well. Put into greased 9 x 12" pan. Pour butter over. Bake 30 minutes.
