Ingredients
- 1/2 cup olive oil
- 1 medium onion, chopped
- 3 cloves garlic, crushed
- 2 tablespoons flat-leaf parsley, minced
- 2 teaspoons sweet paprika
- 1 1/2 pounds new potatoes, peeled & sliced 1/8 inch
- 1 tablespoon flour
- salt & pepper, to taste
- 1 dash ground cloves
- 1 bay leaf
- 1/2 teaspoon thyme
- 4 - cod portions, about 1 inch thick
- 4 teaspoons olive oil
How To Make merluza a la gallega (galician style cod)

Step 1Preheat oven to 350 F.

Step 2In a skillet, heat 1/2 cup of oil. Saute the onion until it is translucent. Add the garlic, 1 tablespoon of the parsley, and the paprika. Add the potatoes and shake to coat well with the oil.

Step 3Sprinkle in the flour, then add water to barely cover the potatoes. Sprinkle with salt, pepper, cloves, bay leaf, and thyme. Cover and cook for 25 minutes, or until the potates are barely tender.

Step 4Divide the potatoes evenly among 4 gratin dishes. Put a piece of cod on top of each. Sprinkle with salt and pepper. Drizzle each one with a teaspoon of olive oil. Bake for 15 minutes, until the fish flakes.

Step 5Sprinkle with the remaining tablespoon of parsley right before serving.
