I borrowed the basic recipe from another fellow Pincher. The recipe comes from Laura Ramos for Salmon Patties Made With Leftover Mashed Potatoes. I have added a few things from my recipe for Simple Salmon Cakes. With all the changes I made to the basic recipe these Mashed Potato Salmon Cakes came out mighty tasty, if I do say so myself. Give them a try, you won't be disappointed. Enjoy!

Ingredients For mashed potato salmon cakes

  • 1 c
    leftover mashed potatoes
  • 1 -7oz. can
    pink or red salmon, drained
  • 1 lg
    egg
  • 1/2 c
    onion, small diced (red, sweet, yellow, your choice)
  • 1/2 c
    green onion, small diced, white and green parts
  • 1/4 c
    red bell pepper, small diced (fresh or in the jar)
  • 1/4 c
    mayonnaise
  • 1 tsp
    dried parsley, crushed
  • 2-3 dash
    hot sauce (your choice) i used tabasco
  • 1/2 tsp
    pepper, or to taste
  • 1 c
    bread crumbs
  • enough oil to coat the bottom of the skillet and then some. for frying the salmon patties.

How To Make mashed potato salmon cakes

  • 1
    In a medium sized mixing bowl, thoroughly mix together; mashed potatoes, drained canned salmon, egg, diced onion, chopped green onion, crushed dried parsley, diced red bell pepper, mayonnaise, pepper and hot sauce.

    Place the bread crumbs into a pie plate. Form the salmon mixture into patties and coat with the bread crumbs. I can get 4 nice sized patties from this mixture.

    I like to place the salmon patties in the refrigerator after coating them with the bread crumbs for at least 30 mins. or better yet, I like to make the salmon patties early in the day so they can sit covered, in the fridge. That way the ingredients get to know one another.

    To a heavy skillet (I use a cast iron skillet) add enough oil to cover the bottom and then a little extra. Heat oil until shimmery.

    Remove salmon patties from refrigerator, make sure oil is hot, now carefully place the salmon patties one by one into the hot skillet with the hot oil.

    Cook until golden brown on the bottom, then carefully turn the salmon patties over and cook until golden brown on the other side.

    I always like to serve salmon patties with something cheesy, such as scalloped potatoes, mac and cheese, or even steamed broccoli with a cheese sauce. I hope you try and enjoy these salmon patties.
