This is recipe from an old friend that I spent much time with fishing and crabbing on the Chesapeake Bay. It is simple and compliments the crab with no unnecessary fillers that take away from that sweet crab taste. Enjoy

Ingredients
- 1 pound fresh jumbo or lump blue crab meat.
- 2 tablespoons mayonnaise
- 2 - eggs, lightly beaten
- 1/2 teaspoon worcestershire sauce
- 1/2 teaspoon cayenne pepper
- 1/4 teaspoon salt
- 1/2 - small onion, grated
- 1/2 tablespoon mustard powder
- 1 teaspoon fresh lemon juice
- 1 teaspoon fresh chopped parsley
- 1/2 teaspoon old bay seasoning
- 18 - ritz crackers,crumbled

Step 1Combine all ingredients except crackers

Step 2Add cracker crumbs in as close to the time you will be sauteeing as possible so they don't get soggy

Step 3form into patties about the size of a hamburger

Step 4saute in frying pan on medium to high heat in butter,10 minutes each side

Step 5make sure crab cakes are crisp outside but moist inside
