mama's "sammin" (salmon) patties

This is one of my favorite meals, I even requested it for my last birthday. But I gotta say my Mama's and my Auntie's are the only ones who can make it just right.

Ingredients
- 2 cans salmon, skin removed (but bones left in)
- 2/3 cup corn meal
- 1/3 cup flour
- 1 teaspoon lemon juice
- 1/2 cup milk
- 1/2 cup onion, minced
- - lard for frying
How To Make mama's "sammin" (salmon) patties

Step 1With a fork tear apart salmon & mix in all ingredients. Form into patties and fry in lard till golden brown.

Step 2Of coure this is not a meal in itself... being from the south... we usually serve these with white gravy (made in the drippings after frying the patties) fried potatoes and biscuits. You assemble this dish by splitting a couple of biscuits, covering them with fried potatoes, then topping that with white gravy & a lot of black pepper. Add a couple of salmon cakes on the side with a glass of sweet iced tea and no Southerner could be happier!
