Ingredients For mahi with garlic ginger glaze

4mahi mahi fillets (about 6 oz ea)

2 tspfreshly grated ginger

2 clovegarlic, minced

3 Tbspsoy sauce

2 Tbspbalsamic vinegar
-
2 tsppeanut oil (or canola)

3 Tbsphoney

pinchred pepper flakes (optional)
How To Make mahi with garlic ginger glaze

1In a gallon ziplock or a glass dish, combine the marinade ingredients - ginger, garlic, soy sauce, balsamic vinegar, peanut oil, honey, and optional pepper flakes, if using. Squish or stir to combine.

2Season the Mahi with salt and pepper, then add to the bag/dish and flip to coat. Zip the bag and let the fish marinate for 30 minutes in the fridge.

3Preheat oven to 375F. Remove the fish fillets from the marinade and place in an oven-proof baking dish. RESERVE THE MARINADE! Bake for 20 minutes or until the fish is done and flakes easily with a fork. Meanwhile, make the glaze.

4Pour the reserved marinade into a small saucepan. Cook over medium heat until a glaze forms. Pour the glaze over the fish and serve immediately.

5NOTE: If you want enough sauce to pour over your rice, double the marinade ingredients. Otherwise, it only makes enough to glaze the fish.
