A quick and easy weeknight recipe, yet full of great flavor! Serve alongside jasmine rice and steamed broccoli for a healthy and delicious dinner!

Ingredients

  • 4 mahi mahi fillets (about 6 oz ea)
  • 2 teaspoons freshly grated ginger
  • 2 cloves garlic, minced
  • 3 tablespoons soy sauce
  • 2 tablespoons balsamic vinegar
  • 2 teaspoons peanut oil (or canola)
  • 3 tablespoons honey
  • pinch red pepper flakes (optional)

How To Make mahi with garlic ginger glaze

  • Step 1
    In a gallon ziplock or a glass dish, combine the marinade ingredients - ginger, garlic, soy sauce, balsamic vinegar, peanut oil, honey, and optional pepper flakes, if using. Squish or stir to combine.
  • Step 2
    Season the Mahi with salt and pepper, then add to the bag/dish and flip to coat. Zip the bag and let the fish marinate for 30 minutes in the fridge.
  • Step 3
    Preheat oven to 375F. Remove the fish fillets from the marinade and place in an oven-proof baking dish. RESERVE THE MARINADE! Bake for 20 minutes or until the fish is done and flakes easily with a fork. Meanwhile, make the glaze.
  • Step 4
    Pour the reserved marinade into a small saucepan. Cook over medium heat until a glaze forms. Pour the glaze over the fish and serve immediately.
  • Step 5
    NOTE: If you want enough sauce to pour over your rice, double the marinade ingredients. Otherwise, it only makes enough to glaze the fish.
