mahi mahi with shrimp and scallops

This mixed seafood dish is finished under the broiler. I think it is best served with rice or orzo and a salad, although asparagus is wonderful as well. I think you will want some type of carb.

Ingredients

  • 1/2 cup butter
  • 1 1/2 cups fresh mushrooms, sliced
  • 2 stalks green onions, sliced
  • 1 1/2 pounds mahi mahi or other fresh fish fillets, cut into 1 inch cubes
  • 1/2 pound medium sized shrimp, peeled and deveined
  • 1/2 pound bay scallops, small
  • 1 cup chablis or other dry white wine
  • 1/2 cup chicken broth
  • 1/3 cup half and half
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 3 tablespoons corn starch
  • 1/4 cup cold water
  • 1/4 cup + 2 Tbsp fine dry bread crumbs
  • paprika
  • 2 tablespoons butter, melted

How To Make mahi mahi with shrimp and scallops

  • Step 1
    Clarify 1/2 cup butter by melting it over low heat. Skim off the white froth that appears on top. Strain off the clear, yellow butter, keeping back the sediment of milk solids.
  • Step 2
    Saute the mushrooms and green onions in 2 Tbsp of clarified butter in a large skillet until tender. Set aside and keep warm.
  • Step 3
    Heat the remaining clarified butter in the skillet. Add the mahi mahi, shrimp, and scallops. Saute for 3 to 5 minutes, stirring frequently. Add the wine, broth, half and half, salt, and pepper. Cook over medium heat for 10 minutes, stirring frequently.
  • Step 4
    Add the reserved mushroom mixture and bring just to a boil. Combine the corn starch and water; stir well. Gradually add the corn starch mixture to the seafood mixture and cook until thickened; stirring frequently.
  • Step 5
    Pour the mixture into a buttered 2-quart gratin dish. Sprinkle with bread crumbs and paprika. Drizzle with 2 Tbsp melted butter. Broil 6 inches from the heat for 1 1/2 to 2 minutes or until golden brown.
