Ingredients
- 1 cup celery, diced
- 1-med. - onion, chopped
- 1/2 cup green pepper, chopped
- 1/4 cup butter
- 1/4 cup flour
- 1 1/2 teaspoons salt
- 1 pound canned "crushed" tomatoes
- 7 - oz. packages frozen shrimp
- 1/4 cup cooking sherry
- 1 1/2 cups cheddar cheese, shredded
- 4 - hard boiled eggs, sliced
- 3 cups cooked rice
How To Make louisiana shrimp bake

Step 1Saute celery, onion & green pepper in butter. Blend in flour & salt. Cook until bubbly.

Step 2Stir in tomatoes,shrimp & sherry. Bring to boil; simmer covered for 10 minutes.

Step 3Stir in "1/2 cup" cheese & eggs. Pour into a 2 quart casserole dish.

Step 4Top with rice, sprinkle with remaining cheese.

Step 5Bake at 375 degrees for 25 to 30 minutes.
