Ingredients
- 4 4 oz salmon fillets
- 1/2 cup white wine
- 1/2 cup orange juice
- 1/2 cup water
- 1 cup plain nonfat yogurt
- 1/2 cup orange juice
- 1/2 cup green onions, finely chopped
- 2 teaspoons fresh dill
- 1/2 teaspoon tabasco sauce
- 1 teaspoon lemon juice

Step 1Marinade salmon filets for 30 minutes in mixture of wine, orange juice and water. Broil salmon for 3-4 minutes on each side. (Sauce ingredients start with yogurt) Mix all the sauce ingredients together and spoon over cooked salmon filets

Step 2Notes: A wonderful way to prepare is to grill instead of broil. A ridged grill makes this a treat even indoors This goes great with asparagus spears or Wilted Greens I've seen varations of this recipie in a number of places, and only eastern European catalogs even refer to the "Petrograd" part (after the old Russian Imperial capital). Why? Perhaps because it was considered a treat of the affluent (read nobility) with the oranges and pepper sauce. Remember that when this recipie was created, salmon was considered "junk" fish and unfit for "refined" tastes - thus it had to be "dressed up" with this wonderful sauce.
