lime and mustard fish fillets
This recipe is best with a nice firm whitefish. I suggest red snapper, grouper, or amberjack. A less expensive alternative is tilapia, but try to find it fresh....it just tastes better! If you have to use frozen, soak the fish in milk for an hour or so to get rid of that "fishy" taste.

- 2 pounds fish fillets (flounder, tilapia, red snapper, amberjack)
- 1/4 cup mayonnaise
- 1/4 cup dijon mustard
- 1 1/2 tablespoons fresh lime juice

Step 1Place the fillets on a rack in a broiler pan.

Step 2Combine the mayonnaise,, mustard, and lime juice; spread mixture over fillets.

Step 3Broil 6 inches from the heat 8 to 10 minutes or until the fish flakes easily when tested with a fork.
