lemon garlic baked cod
This is a great way to cook fish, especially if you are skeptical or nervous about having to flip fish in a pan. No need to flip this one! This recipe is also posted on my personal blog foodyschmoodyblog.com where you can find more easy to make family recipes.

Ingredients
- 2 pounds cod fillets
- 1/2 cup sour cream
- 1 teaspoon lemon zest
- 1 teaspoon minced garlic
- 1 tablespoon chopped parsley, fresh
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- OPTION TOPPING INGREDIENTS:
- 1 tablespoon butter, melted
- 1/4 cup seasoned panko crumbs
How To Make lemon garlic baked cod

Step 1Preheat oven to 425 F.

Step 2In a bowl stir together sour cream, zest, garlic, parsley, salt and pepper. Spread the mixture over the cod fillets. Place fillets on a baking sheet, lined with parchment paper.

Step 3If panko topping is desired, stir together the panko and butter and press on the tops of fillets.

Step 4Bake 425 for 10-12 minutes.
