I have been making this for many years, as does my mom. We use the same recipe for salmon loaf or croquettes (rolled in cracker crumbs and fried), I generally fix fried hominy with the salmon patties...

Ingredients

  • 2 cans boneless skinless pink salmon (canned)7oz
  • 1 1/2 cups quaker old fashioned oats, uncooked
  • 1/3 cup milk
  • 1 teaspoon dill weed
  • 2 tablespoons margarine
  • 1/2 cup salsa
  • 1 teaspoon lemon juice
  • 1 teaspoon garlic
  • - salt and pepper to taste
  • - dill butter or horseradish (opt)
  • 1 large egg or egg whites beaten
  • 2 teaspoons cilantro

  • Step 1
    1. 1 Combined all ingredients except margarine; mix well. 2. 2 Shape to form oval patties about 1/2 inch thick. 3. 3 Pan fry the patties in margarine over medium heat for 3-4 minutes on each side or until golden brown and heated through. 4. 4 Serve hot, with dill butter or horseradish
