I used fresh catch lake bass. Any white fish would be great. This is delicious.

Ingredients
- 4 bass fish filets
- salt and pepper
- 1 1/4 cups sake
- 5 tablespoons mirin
- 2 tablespoons dark soy sauce
- 3 tablespoons sugar
- 1 tablespoon sweet soy sauce
- 1 teaspoon sambal olek
- scallions, for serving
- picked ginger, for serving
How To Make japanese simmer fish

Step 1Dry the fish filets and season with salt and pepper.

Step 2Mix the sake, mirin, dark soy sauce, sugar, sweet soy sauce, and Sambal. Add to a pan large enough to place the 4 filets side by side. Bring the sauce to a boil reduce to simmer and simmer for 5 minutes.

Step 3Add the fish filets and place and cover them with a Japanese drop lid.

Step 4Simmer the fish for about 15 more minutes depending on how thick the fish is. The sauce with keep reducing.

Step 5Plate the fish on a plate. Drizzle the simmer sauce over the top and garnish with chopped scallions and chopped picked ginger.
