My family loves these tuna patties. I serve them with a nice green salad and Italian green beans.

Ingredients
- 2 (5 oz.) cans light tuna in water, drained well
- 1 medium zucchini, shredded
- 1 - egg, lightly beaten
- 1/2 cup italian bread crumbs
- 2 tablespoons shredded mozzarella cheese
- 2 tablespoons grated parmesan cheese
- 2 tablespoons mayonnaise
- 1/2 teaspoon oregano
- 1/2 teaspoon basil
- 1/4 teaspoon onion powder
- 1/2 teaspoon garlic powder
- to taste - salt & pepper
- 2-3 tablespoons olive oil
How To Make italian tuna patties

Step 1Shred the zucchini. Place it in a colander. Press lightly with a spoon to remove the liquid.

Step 2Place all ingredients except oil into a mixing bowl. Stir to blend very well.

Step 3Form the mixture into patties. Set aside.

Step 4Heat olive oil in a large skillet over medium.

Step 5Cook patties until golden brown (about 2-3 minutes per side) Drain on paper towel lined plate.

Step 6*** Be sure not to crown the skillet. Cook in batches if needed.
