My family loves these tuna patties. I serve them with a nice green salad and Italian green beans.

Ingredients

  • 2 (5 oz.) cans light tuna in water, drained well
  • 1 medium zucchini, shredded
  • 1 - egg, lightly beaten
  • 1/2 cup italian bread crumbs
  • 2 tablespoons shredded mozzarella cheese
  • 2 tablespoons grated parmesan cheese
  • 2 tablespoons mayonnaise
  • 1/2 teaspoon oregano
  • 1/2 teaspoon basil
  • 1/4 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • to taste - salt & pepper
  • 2-3 tablespoons olive oil

How To Make italian tuna patties

  • Step 1
    Shred the zucchini. Place it in a colander. Press lightly with a spoon to remove the liquid.
  • Step 2
    Place all ingredients except oil into a mixing bowl. Stir to blend very well.
  • Step 3
    Form the mixture into patties. Set aside.
  • Step 4
    Heat olive oil in a large skillet over medium.
  • Step 5
    Cook patties until golden brown (about 2-3 minutes per side) Drain on paper towel lined plate.
  • Step 6
    *** Be sure not to crown the skillet. Cook in batches if needed.
  • Step 7
    Serve immediately
