Ingredients

  • 4 thick salmon fillets, skin removed
  • 2 tablespoons melted butter
  • 1 teaspoon paprika
  • salt and pepper
  • 8 ounces raw shrimp, peeled and deveined and minced
  • 4 ounces softened cream cheese
  • 2 tablespoons mayonnaise
  • 4 cloves garlic, minced
  • 1/2 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • 2 tablespoons fresh parsley, chopped
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chicken or seafood stock
  • 2 tablespoons butter

How To Make herb and shrimp stuffed salmon

  • Step 1
    Preheat oven to 400 degrees F. Grease a baking dish with butter. Cut a slit into each salmon filet to form a pocket, but not all the way through.
  • Step 2
    Mix the cream cheese and mayonnaise. Fold in the shrimp, garlic, Dijon, lemon juice, parsley, salt, and pepper. Stir just until combined.
  • Step 3
    Stuff the filling into the salmon pockets. Season the salmon with the paprika, salt, and pepper.
  • Step 4
    Place the salmon in the baking sheet, and pour the stock around the salmon. Add the butter.
  • Step 5
    Bake for 20 minutes. Let rest 3 minutes and spoon some of the sauce over the salmon. Enjoy
