Haddock (similar to cod) is beloved in Maine. Here is my recipe for Haddock Au Gratin.

Ingredients

  • 1/4 cup butter or margarine
  • 1 small onion, chopped
  • 2 tablespoons all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 cups milk
  • 2 pounds haddock fillets
  • 1 cup shredded cheddar cheese

How To Make haddock au gratin

  • Step 1
    Preheat the oven to 350 degrees F. Melt the butter in a medium saucepan over medium heat. Add the onion and cook until it is soft.
  • Step 2
    Stir in the flour, salt, and pepper, and cook for approximately 1 minute.
  • Step 3
    Add the milk, gradually stirring all the time, and cook until thickened.
  • Step 4
    Grease a 13X9" baking pan. Pour some of the cooked sauce onto the bottom of the dish.
  • Step 5
    Add the haddock.
  • Step 6
    Add the rest of the sauce. Top it off with the shredded cheese.
  • Step 7
    Bake in a preheated 350 degree oven for 25 - 30 minutes.
