grilled tilapia with peach bbq sauce

This recipe is from Paula Deen's show on the Food Network. It hasn't been tested in my kitchen, but it will be. It just sounds so light and refreshing.

Ingredients

  • 3/4 cup ketchup
  • 3 tablespoons prepared mustard
  • 1/2 cup cooking oil
  • 1/2 cup apple cider vinegar
  • pinch of garlic salt
  • 3 tablespoons worcestershire sauce
  • 2 teaspoons paprika
  • 1/4 cup lemon juice
  • 1 teaspoon pepper
  • 3 tablespoons brown sugar
  • 3/4 cup water
  • 1/2 cup onions, finely chopped
  • 2 cups fresh or canned peaches
  • 4 - tilapia fillets
  • - house seasoning (recipe to follow)
  • 1 - lime, juiced
  • HOUSE SEASONING
  • 1/2 teaspoon each; kosher salt, garlic powder,onion powder and fresh ground pepper

How To Make grilled tilapia with peach bbq sauce

  • Step 1
    Mix all the ingredients together in a saucepan, excluding the peaches and house seasoning; simmer over medium heat for 15 to 20 minutes.
  • Step 2
    While the sauce is simmering, puree 2 cups of canned peaches or fresh peaches. Once the sauce is cooked, add the pureed peaches to the sauce and stir together.
  • Step 3
    Preheat the grill to medium heat, season the tilapia with the house seasoning. cook the fish on each side for 3 to 4 minutes. During the last few minutes of cooking, brush the fish with barbeque sauce.
  • Step 4
    Once cooked and plated, spoon some of the peach barbeque sauce on top of the fish.
