grilled shrimp & cheesy bacony grits
I had initially planned on using the shrimp for another dish, but wanted something different. Someone suggested Shrimp and Grits, so here is my version. It came out fantastic, was a huge hit with the little men in my life! Woohoo! Hope you love it as much as we did! Thanks Monica

Ingredients
- 1 pound shrimp, cleaned and deviened
- 4 - slices of slab bacon cut into lardons, keep the bacon fat
- 1 - lemon
- 4 cups chicken stock
- 1/4 cup light cream, or milk
- 1 cup corn meal, i had white so that's what i used either is fine)
- 2 - garlic cloves minced, or garlic powder
- - handful of parsley chopped
- - green onions chopped green part only
- - cajun seasoning, sprinkle on shrimp
- - salt and pepper
- - reserved bacon fat
- 2 cups cheddar cheese
- 2 tablespoons butter

Step 2I cooked the bacon in the pan removed it and then added the chicken stock and boiled it. Then I added the cormeal and stirred until it thickened. Added the butter and cheese took off the heat and added the cream, salt and pepper, garlic and parsley

Step 3Season the shrimp with salt, pepper, lemon, garlic cajun seasoning and I poured some of the bacon fat over instead of olive oil.

Step 4Cook the shrimp on both sides on a grill pan until pink on both sided. Or on the grill if weather allows

Step 5Spoon the grits in a bowl, add bacon, more cheese top with the shrimp and scallions.
