Ingredients

  • 2 1/4-21/2 pounds salmon
  • 3-4 tablespoons old bay seasoning
  • - salt and pepper
  • 2 tablespoons grape seed oil
  • 1 cup orzo
  • 1 1/2 cups water
  • 1/2 cup yellow onion, diced
  • 1/4 - each of red, green & yellow pepper, diced
  • 1 bag of spinach

How To Make grilled salmon with orzo

  • Step 1
    Season the salmon with the Old Bay and salt and pepper.
  • Step 2
    Heat the skillet on high heat with the oil and turn on your oven to 325 degrees. Add the salmon flesh side down and cook for 2 minutes.
  • Step 3
    Turn over and cook in the oven for 8 minutes. Remove from oven and set salmon aside. Add the vegetables into the skillet which is back on stove top on medium heat. Cook for 3 minutes. Set aside.
  • Step 4
    Add the orzo and let it absorb the flavors in the pan for 1 minute. Add in water. Cook allowing the orzo to absorb most of the water. Add back in the vegetables and the spinach. Cook for 2 minutes allowing the spinach to wilt.
  • Step 5
    Top with the salmon and cook for 1 – 2 more minutes until the majority of the water is absorbed. Serve and enjoy!
