Ingredients

  • 2 tablespoons butter, unsalted
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 4 cups peaches, fresh, peeled, pitted & diced
  • 1/2 cup ketchup
  • 1/4 cup orange juice, fresh
  • 1/2 teaspoon orange zest
  • 2 tablespoons lemon juice, fresh
  • 2 tablespoons apple cider vinegar
  • 3 tablespoons light brown sugar
  • 4 tablespoons southern comfort (aka peach bourbon)
  • - salt & pepper, to taste
  • 4 - salmon fillets
  • 2 teaspoons olive oil, extra virgin
  • - brown rice, cooked

How To Make grilled salmon w/ peach bourbon bbq sauce

  • Step 1
    PEACH BOURBON BBQ SAUCE: Melt butter in medium saucepan over medium heat. Add onions & cook, stirring occasionally, until translucent, about 5 minutes. Stir in the garlic & cook for 2 minutes. Add peaches & cook until softened, about 5 minutes. Add the ketchup, orange juice, zest, lemon juice, cider vinegar & brown sugar & stir to combine. Bring mixture to a simmer & cook for 30 minutes or until thickened. Using a immersion blender, puree the sauce until smooth. Stir southern comfort into bbq sauce & set aside until ready to use.
  • Step 2
    Preheat grill to medium heat.
  • Step 3
    FISH: Brush the salmon on all sides with olive oil & season with salt & pepper. Place the fish on the grill & cook for 2 minutes. Turn fish on 45 degree angle & cook additional 2 minutes. Do same after turning fish. During the last few minutes of cooking, brush the fish with reserved peach bbq sauce.
  • Step 4
    Serve over rice & with remaining peach bbq sauce.
