grilled salmon in lime sauce
Salmon has been one of my favorite fishes for a long time. This fresh water fish is easy to prepare and has a delightful soft texture.

Ingredients
- 1 small tomato, chopped
- 1 small red bell pepper, chopped
- 2 - green onions, thinly sliced
- 2/3 cup lime juice
- 2 tablespoons vegetable oil
- 1/2 teaspoon lime peel, grated
- 1/2 teaspoon cayenne pepper
- 1 1/2 pounds salmon fillet
How To Make grilled salmon in lime sauce

Step 1Combine tomato, red pepper, onions, lime juice, oil, lime peel and pepper in large bowl; mix well. Cut salmon into 4 pieces. Place salmon in marinade and turn several times to coat. Refrigerate 30 minutes.

Step 2Drain and discard marinade. Place each piece of salmon and about 1/3 cup vegetables on piece of heavy duty aluminum foil; fold foil around the mixture and seal tightly.

Step 3Grill, covered, over medium heat for 15 to 20 minutes or until salmon flakes easily with a fork.
